Barley Beef Soup

  • 2 lbs. Cooked beef
  • 1 Cup chopped onion
  • 2 Tablespoon chopped green pepper
  • 1 Cup chopped celery
  • 1 Cup diced Tomato
  • 1 teaspoon basil
  • 1 Cup red wine
  • 1/4 teaspoon pepper
  • 1 Cup cooked Western Trails Hulless Barley grain
  • 4 to 5 Cups beef broth
  • salt to taste

Brown beef in 1 Tablespoon cooking oil, add onion, green pepper, celery and spices. Mix well while cooking, then add wine and simmer for a few minutes. Add barley and beef broth to desired thickness for soup, then simmer for 1 hour.
