Barley Broccoli Salad

Salad:

  • 3 cups water
  • 1/4 teaspoon salt
  • 1/2 cup Western Trails barley
  • 1 large bunch broccoli, cut into flowerettes, peel and chunk stems
  • 1 cup raisins and 1/2 cup thinly sliced red onion
  • 10 strips bacon, fried crisp and crumbled
  • 1 cup roasted sunflower seeds

Dressing:

  • 1/4 cup sugar
  • Heaping 1/3 cup mayonnaise
  • Heaping 1/3 cup yogurt
  • 2 tablespoon white vinegar

Cook barley 50-60 minutes in 2 cups water. Drain, rinse and chill. Combine all ingredients. Prepare dressing. Toss and chill all together.
