Barley Stir Fry

  • 1 cup raw Western Trails Hulless Barley or 2+ cups of pre-cooked barley
  • 1/4 cup sesame oil (any other oil will do too)
  • 2 tablespoon finely chopped fresh ginger
  • 1 small onion, diced
  • 2 cups matchstick size carrots
  • 2 peppers or Italian peppers (long slices), any color
  • 1 or 2 zucchini (dice size) or small zucchini slices, halved
  • 1/4 cup fruit jam (mango, peach, apricot)
  • 1/4 cup soy sauce

Place uncooked barley and 2 cups of water in a medium saucepan; bring to boil and boil 5 minutes. Cover with lid and remove from heat. Let stand 1-2 hours until barley is tender. Will double in size.

Barley can be cooked ahead, as it freezes well.

Heat oil. Add ginger and onion, cook on low several minutes. Add carrots, pepper, jam and soy sauce, cook several minutes. Add barley and zucchini. Simmer 5 minutes and serve.
