Spray large skillet with non-stick cooking spray. Heat skillet over medium heat. Add ground turkey; crumble and cook until turkey is no longer pink. Remove from pan and drain. Pour off any liquid from pan. Add olive oil, onion and mushrooms; saute for 4 to 5 minutes, stirring occasionally. Season with oregano, salt and pepper. Cook additional 4 minutes.
Stir in water and chicken seasoning. Blend together sour cream and flour. Stir in sour cream mixture, cooked barley and meat. Continue to cook over low heat until heated through. Garnish with chopped parsley, if desired, and serve.
