Company Beans & Rice

  • 1 onion, chopped
  • 1 to 2 cloves garlic, crushed
  • 2 tablespoons oil
  • 2 tomatoes, chopped
  • 1 zucchini, chopped
  • 1/2 teaspoon oregano
  • 2 cups cooked Western Trails beans (kidney, pink, great northern, etc.)
  • 3 to 4 cups cooked rice
  • 1 cup shredded cheese

Sauté onion and garlic in oil until soft. Add tomatoes, zucchini and oregano. Cover, simmer 5 minutes. Add beans. Simmer 5 minutes. Add salt and pepper. Pour over rice and cover with cheese.
