Crunchy Barley Salad

  • 2 cups cooked, well drained, Western Trails barley (1/2 c. uncooked)
  • 1/2 cup water chestnuts, drained, sliced
  • 1 cup chopped celery
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 1 cup cubed ham
  • 1 package Italian salad dressing mix
  • 1/3 cup sugar
  • 1/4 cup salad oil
  • 1/3 cup pimentos

Mix together cooked barley, water chestnuts, celery, green pepper, pimentos, onion and ham. Cover and chill. In a screw top jar, combine Italian dressing mix with sugar and salad oil. Cover and shake well. Chill.
