Portuguese Beans

  • 1 pound Western Trails pink or pinto beans (may substitute pinto beans)
  • 2 teaspoons ground cumin seed
  • 2 teaspoons ground allspice
  • 2 teaspoons ground cloves
  • 8 ounces canned tomato sauce
  • 1 large onion
  • 1 pound slab bacon
  • 1/2 pound linguica (Portuguese sausage)
  • Salt and pepper

Clean and wash dried beans, no need to soak. Use at least a 3 quart pan; cover beans with 2 inches of water bring to a boil. Add spices and simmer until beans tender. Add meats and simmer until meat is done. Stir in tomato sauce and coarsely chopped onion.

Serve with beef or chicken and lots of French bread.
