Simple Barley Bake

  • 1 cup Western Trails Hulless Barley, whole grain
  • 1/2 cup butter
  • 8 ounces fresh mushrooms
  • 1 can French onion soup or
  • 1 dry onion soup mix packet with 2 cups water
  • 1/2 cup shredded cheese (cheddar or other)

Boil barley in water 5 minutes and cover and let sit 1 hour. Drain off water or use in Barley Water. (Can be frozen or refrigerated to use later at this point.) Sauté mushrooms in butter, add barley & sauté. Pour into baking dish or crock pot. Add onion soup. Bake 1 hour & 15 minutes at 350 or 3-4 hours in crock pot (May need to add 2/3 cup more water when baking in oven because of evaporation.). Add cheese on top before serving.

Serves 8. (1 ounce grain=1 serving)
