Boil barley in water 5 minutes and cover and let sit 1 hour. Drain off water or use in Barley Water. (Can be frozen or refrigerated to use later at this point.) Sauté mushrooms in butter, add barley & sauté. Pour into baking dish or crock pot. Add onion soup. Bake 1 hour & 15 minutes at 350 or 3-4 hours in crock pot (May need to add 2/3 cup more water when baking in oven because of evaporation.). Add cheese on top before serving.
